Great for breakfast on the go or when you’re craving something sweet. Goes great with Milk!
Ingredients
1 1/2 cups oats
3 super rippened bananas
1/2 cup of unsweetened applesauce
1/4 teaspoon vanilla
1 tablespoon splenda OR honey
1/4 cup dried blueberries OR dark chocolate chips
1/4 teaspoon vanilla

1) Preheat oven to 350 degree. Mash bananas, add oats, applesauce, vanilla, splenda and fruit or chocolate. Mix well and spoon on to baking sheet.
2) Bake for 30 minutes or until lightly browned.

Does it matter if the oats ate quick cooking or should the be the old fashion style?
I actually used the quick cooking oats. A friend of mine tried it with old fashioned oats and she said it worked as well. =)
how many calories are in one cookie? and whats the nutrition breakdown?
A few of you asked about the Calories, so I have done the math. Please remember these numbers are approximate and depend on the specific ingredients you use.
Using Quaker quick oats, small bananas (~5″ long), Trader Joe’s unsweetened applesauce and their Dark Chocolate Lover’s Bar the Calories are about 982 for the batch. If you yeild 12 cookies, that’s about 81 Calories per cookie.
Now, substitue stevia and blueberries for the honey and chocolate and you are looking at 742 Calories per batch, yeilding 61 Calories per cookie.
I have not made these, but they look amazing! Hope this helps
